Rest the Meat
Once cooked, remove the tri-tip from the grill and let it rest for 10 minutes before slicing.
Making the Chimichurri Sauce

Combine Ingredients
In a bowl, mix together chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.

Blend the Sauce
Stir the mixture until well combined. Allow the chimichurri to sit for at least 15 minutes to let the flavors meld.
Serving

Slice and Serve
Slice the rested tri-tip against the grain and serve with a generous drizzle of chimichurri sauce on top.
