Preparing the Tri-Tip

    Season the Meat

    Rub the tri-tip roast with olive oil, salt, black pepper, and garlic powder on all sides.

    Grill the Tri-Tip

    Preheat your grill to medium-high heat. Place the tri-tip on the grill and cook for about 6-8 minutes per side, or until it reaches your desired doneness (135°F for medium-rare).

    Rest the Meat

    Once cooked, remove the tri-tip from the grill and let it rest for 10 minutes before slicing.

Making the Chimichurri Sauce

    In a bowl, mix together chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.

    Stir the mixture until well combined. Allow the chimichurri to sit for at least 15 minutes to let the flavors meld.
