    Prepare the Salmon

    In a skillet, heat olive oil over medium heat. Season the salmon fillets with salt and black pepper. Cook the salmon for about 4-5 minutes per side, or until cooked through. Remove from skillet and flake the salmon into bite-sized pieces.

    Make the Piccata Sauce

    In the same skillet, add minced garlic and sauté for about 1 minute. Add lemon juice and capers, stirring to combine. Simmer for 2-3 minutes until the sauce thickens slightly.

    Combine Filling

    In a large bowl, mix the flaked salmon with the piccata sauce, cream cheese, and chopped parsley until well combined.

    Assemble Enchiladas

    Preheat the oven to 375°F (190°C). Take a corn tortilla, add a generous scoop of the salmon filling, and roll it up tightly. Place the rolled enchiladas seam-side down in a greased baking dish.

    Top with Cheese

    Once all enchiladas are assembled, sprinkle shredded mozzarella cheese on top.

    Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.

    Remove from the oven, let cool slightly, and serve warm. Garnish with additional parsley if desired.
