    Prepare the Pork

    Preheat your oven to 375°F (190°C). Season the pork loin with salt, black pepper, cumin, and paprika. Rub the minced garlic over the pork.

    Sear the Pork

    In a large oven-proof skillet, heat olive oil over medium-high heat. Sear the pork loin on all sides until browned (about 4-5 minutes per side).

    Prepare the Poblanos

    While the pork is searing, roast the poblano peppers over an open flame or under the broiler until charred. Once charred, place them in a plastic bag to steam for about 10 minutes. Afterward, peel off the skin, remove the seeds, and chop them.

    Combine and Bake

    Once the pork is seared, add the chopped poblano peppers and chicken broth to the skillet. Cover the skillet with foil and transfer it to the oven. Bake for 25-30 minutes or until the pork reaches an internal temperature of 145°F (63°C).

    Garnish and Serve

    Remove the skillet from the oven, let the pork rest for 10 minutes, then slice it. Serve garnished with fresh cilantro and a squeeze of lime juice.
