Prepare the Lentils
Rinse the lentils under cold water. In a saucepan, combine lentils with 3 cups of water, bring to a boil, then simmer for 20-25 minutes until tender. Drain and set aside.

Make the Leek Cream Sauce
Slice leeks finely and sauté in 1 tablespoon of olive oil over medium heat until soft. Add heavy cream, salt, and pepper. Simmer for 5-7 minutes until thickened. Set aside.

Poach the Salmon
Fill a large pan with water, season with salt, and bring to a gentle simmer. Add salmon filets and poach for about 10-12 minutes until cooked through. Remove and drain.

Prepare the Sun-dried Tomato-Fennel Relish
Chop sun-dried tomatoes and fennel bulb. Mix together with a drizzle of olive oil and salt for seasoning.

Assemble the Dish
On a plate, place a pancake, top with lentils, a poached salmon filet, drizzle with leek cream sauce, add grilled asparagus, and finish with sun-dried tomato-fennel relish.
