Preparation and Assembly
- 1
Prepare the Filling
In a large mixing bowl, combine the shredded chicken, jerk spice seasoning, black beans, corn, and half of the enchilada sauce. Mix until all ingredients are well incorporated.
- 2
Assemble the Enchiladas
Preheat your oven to 375°F (190°C). Take a flour tortilla and spoon about 1/3 cup of the chicken filling into the center. Roll the tortilla tightly and place it seam-side down in a greased 9x13 inch baking dish. Repeat with remaining tortillas and filling.
- 3
Add Sauce and Cheese
Pour the remaining enchilada sauce over the assembled enchiladas. Sprinkle the shredded cheese on top, followed by the chopped green onions.
- 4
Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- 5
Serve
Let the enchiladas cool for a few minutes before serving. Enjoy your jerk spice chicken enchiladas!
