    Prepare the Chilies

    Remove the stems and seeds from the guajillo chilies. Rinse them under cold water and soak them in hot water for about 15 minutes until softened.

    Make the Sauce

    In a blender, combine the softened guajillo chilies, 1 cup of beef broth, garlic cloves, cumin, oregano, salt, and black pepper. Blend until smooth and set aside.

    Sear the Beef

    In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Cut the beef chuck roast into large chunks and season with salt and pepper. Sear the beef on all sides until browned, about 5-7 minutes.

    Cook the Beef

    Add the chopped onion to the pot and cook for 2-3 minutes until softened. Pour in the guajillo sauce and the remaining beef broth. Bring to a simmer, cover, and cook on low heat for 2 to 2.5 hours, or until the beef is fork-tender.

    Serve

    Once the beef is tender, remove it from the pot and shred it using two forks. Return the shredded beef to the sauce, stir to combine, and serve hot.
