Grilled Norwegian Steelhead Piccata Recipe

    Prepare the Fillets

    Rinse the Norwegian Steelhead fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Dredge in Flour

    Place the all-purpose flour in a shallow dish. Dredge each fillet in the flour, shaking off any excess.

    Heat the Pan

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until hot.

    Cook the Fillets

    Add the fillets to the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the fillets and set aside.

    Make the Piccata Sauce

    In the same skillet, add the remaining butter. Once melted, add the minced garlic and capers. Sauté for 1-2 minutes until fragrant.

    Add Lemon Juice

    Pour in the lemon juice, scraping up any brown bits from the bottom of the pan. Allow it to simmer for a couple of minutes.

    Finish the Sauce

    Stir in the chopped parsley and return the fillets to the skillet, spooning the sauce over them. Cook for an additional minute to warm through.

    Serve

    Transfer the fillets to a serving platter and drizzle with the piccata sauce. Garnish with additional parsley if desired.
