Cook the Chicken
Add the diced chicken to the pot and cook until browned, about 7-10 minutes.

Add Garlic and Seasoning
Stir in the minced garlic, Cajun seasoning, bay leaves, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.

Combine Ingredients
Add the diced tomatoes (with juice), chicken broth, and rice to the pot. Bring the mixture to a boil.

Simmer the Jambalaya
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes.

Add Shrimp
After 20 minutes, stir in the shrimp, cover, and cook for an additional 5-7 minutes, or until the shrimp is cooked through and the rice is tender.

Remove the bay leaves, garnish with chopped parsley, and serve hot.
