Prepare the Filling
In a large skillet over medium heat, add the Creekstone ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Drain excess fat.

Season the Filling
Stir in cumin, chili powder, salt, and black pepper. Cook for an additional 2 minutes, mixing well to combine. Remove from heat.

Assemble the Enchiladas
Preheat your oven to 350°F (175°C). Take a corn tortilla, add about ¼ cup of the beef filling and a sprinkle of cheese in the center, then roll it up tightly. Place the rolled tortilla seam side down in a greased 9x13 inch baking dish. Repeat with the remaining tortillas and filling.

Add Sauce and Cheese
Pour the enchilada sauce over the rolled tortillas, ensuring they are well covered. Sprinkle the remaining cheese on top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
