Cooking Instructions

  1. 1

    Prepare the Pork

Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and chili powder.

  2. 2

    Mix Marinade

In a bowl, combine orange juice, lime juice, minced garlic, and bay leaves.

  3. 3

    Marinate Pork

Place the seasoned pork chunks in a large resealable bag or bowl and pour the marinade over the pork. Seal and refrigerate for at least 2 hours, preferably overnight.

  4. 4

    Cook the Pork

In a large skillet or Dutch oven, heat olive oil over medium-high heat. Remove the pork from the marinade, reserving the marinade. Sear the pork on all sides until browned.

  5. 5

    Add Marinade and Simmer

Add the reserved marinade to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for 2-3 hours or until the pork is fork-tender.

  6. 6

    Shred the Pork

Remove the pork from the pot and shred it with two forks. Return the shredded pork to the pot and stir to combine with the juices.

  7. 7

    Serve

Serve the carnitas warm with traditional accompaniments like tortillas, diced onions, cilantro, and lime wedges.
