    Prepare the Salmon

    Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet. Drizzle with olive oil and lime juice, and season with garlic powder, cumin, salt, and black pepper. Bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

    Shred the Salmon

    Once cooked, remove the salmon from the oven and let it cool slightly. Then, use a fork to shred the salmon into bite-sized pieces.

    Assemble the Taquitos

    Warm the corn tortillas in a skillet or microwave until pliable. Place a few tablespoons of the shredded salmon on each tortilla, add some shredded cabbage, chopped cilantro, and a slice of avocado. Roll up tightly and secure with a toothpick if needed.

    Cook the Taquitos

    In a large skillet, heat a bit of oil over medium heat. Add the taquitos seam-side down and cook for about 2-3 minutes on each side until golden and crispy.

    Remove from the skillet and serve warm with a side of sour cream for dipping.
