In a large skillet over medium heat, add a splash of olive oil. Sauté the red onion and garlic until translucent. Add the diced bell peppers and cook for another 3-4 minutes. Stir in the shredded chicken, cumin, chili powder, salt, black pepper, and chopped cilantro. Cook for an additional 5 minutes, stirring occasionally.

Assemble the Enchiladas
Preheat the oven to 375°F (190°C). Take a flour tortilla and spoon about 1/3 cup of the chicken mixture down the center. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas and filling.

Bake the Enchiladas
Once all the enchiladas are in the baking dish, pour your favorite enchilada sauce over the top. Sprinkle with cheese if desired. Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
