Method
Preparing the Blackened Salmon

Season the Salmon
Rub the salmon fillets with cajun seasoning on both sides.

Making the Chipotle-Lemon Butter

Prepare the Butter
In a small saucepan, melt the butter over low heat. Stir in chipotle in adobo, lemon juice, and minced garlic. Mix well and set aside.
Preparing the Mashed Sweet Potatoes

Boil the Sweet Potatoes
Peel and chop sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Mash the Sweet Potatoes
Drain the sweet potatoes and return to pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
Making the Aqui Slaw

Mix the Slaw
In a large bowl, combine shredded cabbage, shredded carrots, chopped cilantro, lime juice, olive oil, and salt. Toss to combine.
Assembly

Plate the Dish
On each plate, serve a portion of mashed sweet potatoes, top with blackened salmon, drizzle with chipotle-lemon butter, and garnish with diced mango. Serve Aqui slaw on the side.
