Barbacoa Pork
Cooking Instructions
1. Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.
2. Sauté Aromatics
In a large skillet, heat a little oil over medium heat. Add chopped onion and minced garlic, cooking until softened.
3. Blend the Sauce
In a blender, combine chipotle peppers, cumin, oregano, black pepper, and lime juice, along with the sautéed onion and garlic. Blend until smooth.
4. Cook the Pork
Place the pork chunks in a slow cooker. Pour the blended sauce over the pork, add bay leaves and beef broth. Season with salt to taste.
5. Slow Cook
Cover and cook on low for 8 hours or until the pork is tender and easily pulled apart.
6. Shred the Pork
Once cooked, remove the pork from the slow cooker, shred it using two forks, and return it to the cooker to soak up the juices.
7. Serve
Serve the barbacoa pork in a bowl with rice, beans, avocado, cilantro, and lime wedges as accompaniments.
