Prepare the Chicken
Season the chicken breast with blackening seasoning and cook it in a skillet over medium-high heat for about 5-7 minutes per side, or until cooked through. Remove from heat and let it rest before slicing.

On one half of each flour tortilla, layer the sliced blackened chicken, sautéed green peppers, onions, and sprinkle cheddar cheese on top. Fold the tortillas over to create a half-moon shape.

Heat a non-stick skillet over medium heat. Cook each quesadilla for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese has melted. Use a spatula to flip them carefully.

Cut the quesadillas into wedges and serve them hot with salsa and sour cream on the side.
