Prepare Shrimp

Coat Shrimp
In three separate bowls, set up a breading station: one with flour, one with beaten eggs, and one with Panko breadcrumbs mixed with salt and pepper. Dredge each shrimp in flour, dip in the egg, and then coat with Panko breadcrumbs.

Fry Shrimp
In a deep skillet, heat vegetable oil over medium-high heat until hot. Carefully add the breaded shrimp in batches, frying until golden brown and crispy, about 2-3 minutes on each side. Remove and drain on paper towels.
Make Spicy Aioli

Mix Ingredients
In a medium bowl, combine mayonnaise, Sriracha sauce, soy sauce, lime juice, minced garlic, and sesame oil. Whisk until smooth and well combined. Adjust the spiciness by adding more Sriracha if desired.
Assemble Wraps

Layer Ingredients
On each tortilla wrap, spread a generous amount of spicy aioli. Add a handful of shredded lettuce followed by a portion of crispy fried shrimp.

Wrap and Serve
Roll the tortilla tightly, folding in the sides as you go. Cut in half if desired and serve immediately with extra aioli on the side.
