    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 10-12 minutes.

    Cool the Eggs

    After the timer goes off, carefully move the eggs to a bowl of ice water. Let them chill for at least 5 minutes before peeling.

Filling Preparation

    Prepare the Filling

    Once the eggs are cooled and peeled, slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Add mayonnaise, Dijon mustard, smoked paprika, salt, and black pepper to the yolks. Mash and mix until smooth and creamy.

Smoking and Assembly

    Smoke the Eggs

    Preheat your smoker or grill for indirect cooking at a low temperature (around 225°F or 107°C). Place the halved egg whites on the smoker for about 15 minutes to impart a light smoky flavor.

    Fill the Egg Whites

    Remove the smoked egg whites from the smoker. Spoon or pipe the yolk mixture back into each egg white half.

    Prepare the Toppings

    Cook the bacon slices until crispy. Once cooled, chop them into small pieces. Chop the chives finely.

    Garnish the Eggs

    Top each deviled egg with chopped bacon and a sprinkle of chives for garnish.
