Pommes Frites

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into long strips about 1/4 inch thick. Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels. Make sure they are completely dry to ensure crispy fries.

    Heat the Oil

    In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Carefully add a handful of dried potatoes to the hot oil, frying them in batches. Fry until golden brown, about 5-6 minutes per batch. Remove them and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with salt and pepper. If using truffle oil, drizzle over the fries while they are warm, and toss to coat.

Cajun Remoulade

    Mix Ingredients

    In a medium bowl, combine the mayonnaise, Dijon mustard, hot sauce, paprika, garlic powder, onion powder, chopped parsley, and lemon juice. Mix until well combined.

    Chill

    Cover the remoulade and refrigerate for at least 30 minutes to allow the flavors to meld together.

Serving

    Serve the Dish

    Plate the Pommes Frites and serve with a side of Cajun remoulade, ketchup, and malt vinegar for dipping.
