Mornay Sauce

Prepare the Roux
In a medium saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the all-purpose flour until smooth and cook for about 1-2 minutes until lightly golden.

Add Milk
Gradually add the milk to the roux, whisking constantly to prevent lumps. Continue to cook, stirring frequently, until the sauce thickens and coats the back of a spoon, about 5-7 minutes.

Incorporate Cheese
Remove the saucepan from the heat and stir in the shredded cheddar cheese until melted and smooth. Season with salt, black pepper, and nutmeg. Set aside.

Combine Filling Ingredients
In a large mixing bowl, combine the diced country ham, shredded turkey, and crumbled bacon. Mix well to evenly distribute the ingredients.

Add Mornay Sauce
Pour the prepared Mornay sauce over the filling mixture and stir until everything is well combined.
For Assembly

Fill Mini Frites
Preheat your oven to 375°F (190°C). Spoon the filling mixture into each mini frites, filling them generously.

Top with Cheese
Sprinkle the additional shredded cheddar cheese over the top of each filled mini frites.

Bake
Place the filled mini frites on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Remove from the oven and garnish with chopped fresh parsley before serving. Enjoy your Mini Hotbrowns!
