Preparing the Goat Cheese

Crust the Goat Cheese
Preheat your oven to 375°F (190°C). In a bowl, mix the chopped almonds, dried herbs, salt, and black pepper. Shape the goat cheese into small rounds or patties, then roll each patty in the almond mixture until fully coated.

Bake the Goat Cheese
Place the crusted goat cheese patties on a baking sheet lined with parchment paper. Drizzle with olive oil and bake in the preheated oven for about 10-12 minutes or until golden and warm.
Preparing the Vinaigrette

Mix the Vinaigrette
In a small bowl, whisk together the sherry vinegar, olive oil, Dijon mustard, honey, salt, and black pepper until well combined and emulsified.
Assembling the Salad

Prepare Salad Ingredients
Rinse and dry the baby spinach, then place it in a large salad bowl. Slice the Granny Smith apple and tomato into thin wedges and add them to the bowl.

Once the goat cheese is baked, place the warm patties on top of the spinach and apple-tomato mixture.
