Pasta Preparation

    Cook the Angel Hair Pasta

    In a large pot of boiling salted water, cook the angel hair pasta according to package instructions until al dente. Drain and set aside.

Seafood and Sauce Preparation

    Cook the Seafood

    In a large skillet over medium heat, add the olive oil. Once hot, add the minced shallots and garlic. Sauté for 2-3 minutes until fragrant.

    Add Champagne

    Pour in the champagne and let it simmer for about 2 minutes, allowing the alcohol to cook off.

    Add Cream

    Stir in the heavy cream and bring the mixture to a gentle boil. Reduce the heat and let it simmer for 5 minutes until it slightly thickens.

    Add Seafood

    Add the shrimp, bay scallops, and mussels to the sauce. Season with salt, black pepper, and red pepper flakes. Cook for about 5-7 minutes until the seafood is cooked through and the mussels have opened.

    Stir in the blistered cherry tomatoes, fresh basil, and parsley. Simmer for an additional 2-3 minutes until the tomatoes are warmed through.
