Preparation of Marinade

Mix Marinade Ingredients
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper until well combined.
Prepare Salmon

Marinate the Salmon
Place the fresh salmon fillets in a shallow dish and pour the marinade over the top. Ensure each fillet is evenly coated. Cover with plastic wrap and refrigerate for at least 30 minutes.

Cook Quinoa
In a medium saucepan, combine 1 cup of quinoa with 2 cups of vegetable broth. Bring to a boil over medium-high heat, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the broth is absorbed. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.

Plate the Dish
