Prepare the Au Jus
In a saucepan, combine beef broth, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Bring to a simmer over medium heat, stirring occasionally. Once simmering, reduce heat to low and let it cook for 15 minutes to allow flavors to meld.

Sauté the Onions
In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté for about 5-7 minutes until they are soft and caramelized, stirring occasionally. Remove from heat and set aside.

Assemble the Sandwich
Preheat your oven to broil. Place the hoagie rolls on a baking sheet. Layer each roll with a generous amount of roast beef, followed by the sautéed onions, and top with sliced mozzarella cheese.

Melt the Cheese
Broil the sandwiches in the preheated oven for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.

Remove the sandwiches from the oven and serve immediately with the prepared au jus on the side for dipping.
