Chili Preparation

Sauté Vegetables
In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are tender, about 5-7 minutes.

Brown the Beef
Add the ground beef to the pot. Cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.

Add Beans and Tomatoes
Stir in the diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, salt, and black pepper. Mix well.

Add Jalapenos
Chop the jalapenos (removing seeds for less heat) and add them to the pot. Stir to combine.

Simmer
Bring the chili to a simmer, then reduce the heat to low. Cover and let it cook for at least 30 minutes, stirring occasionally.
Serving

Prepare Toppings
While the chili is simmering, prepare the toppings. Chop additional onions and set aside the shredded cheddar cheese and sour cream.

Serve
Ladle the chili into bowls and top with shredded cheddar cheese, chopped onions, and a dollop of sour cream. Serve with tortilla chips on the side for dipping.
