Preparing the Tartar Sauce

Mix Ingredients
In a small bowl, combine the mayonnaise, finely chopped pickles, lemon juice, chopped capers, salt, and black pepper. Stir until well mixed and refrigerate until ready to serve.
Preparing the Catfish Fillet

Set Up Breading Station
In three separate bowls, place the cornmeal in one, the all-purpose flour mixed with Cajun seasoning in another, and in the third, whisk together the egg and milk.

Heat Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Catfish
Carefully add the breaded catfish fillets to the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Sandwich

Prepare Buns
While the catfish is frying, grill the buns until they are toasted and golden.

Slice Tomato
Slice the tomato into thin slices.

Build the Sandwich
On each grilled bun, layer a lettuce leaf, a fried catfish fillet, and a couple of slices of tomato. Top with the other half of the bun.

Serve
Serve the catfish sandwiches with a side of tartar sauce for dipping.
