Method
Preparing the Catfish

Soak the Catfish
In a large bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Prepare the Breading
In a shallow dish, combine cornmeal, all-purpose flour, salt, black pepper, and cayenne pepper. Mix well.

Coat the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture until completely coated.
Frying the Catfish

Heat the Oil
In a large, deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil, frying them in batches to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

Drain the Catfish
Once cooked, remove the catfish from the oil and place them on a paper towel-lined plate to drain excess oil.
Making the Tartar Sauce

Combine Ingredients
In a bowl, mix together mayonnaise, dill pickle relish, lemon juice, capers, salt, and black pepper until well combined.

Choose and Prepare Sides
Select two sides from coleslaw, French fries, hushpuppies, or corn on the cob. Prepare according to your preference.

Serve the golden fried catfish with your choice of two sides and a generous dollop of tartar sauce on the side.
