Chicken Preparation

Marinate the Chicken
In a bowl, combine chicken thighs, buttermilk, salt, black pepper, paprika, and garlic powder. Mix well and ensure the chicken is fully submerged in the buttermilk. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare for Frying
In a shallow dish, add the flour. Remove the marinated chicken from the refrigerator and allow excess buttermilk to drip off. Dredge each piece of chicken in the flour, making sure to coat it evenly.

Fry the Chicken
In a large, heavy pot, heat oil over medium-high heat until it reaches 350°F (175°C). Carefully add the coated chicken pieces, working in batches if necessary to avoid overcrowding. Fry for 5-7 minutes or until golden brown and the internal temperature reaches 165°F (75°C). Remove the chicken and drain on paper towels.

Mix the Dressing
In a bowl, whisk together yellow mustard, apple cider vinegar, brown sugar, Worcestershire sauce, and hot sauce until smooth and well combined. Adjust seasoning to taste.

Assemble the Sliders
Slice the brioche slider buns in half. Place a piece of fried chicken on the bottom half of each bun, drizzle with Carolina Gold BBQ dressing, and top with pickles and coleslaw if desired. Close the buns and serve immediately.
