Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper. Set aside.

In a large bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps. The batter should be thick enough to coat the back of a spoon.

In a large, deep pot or a deep-fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the correct temperature.
