For the Beer Battered Cod

Method

Preparation of the Beer Battered Cod

  1. 1

    Prepare the Cod

Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper. Set aside.

  2. 2

    Make the Batter

In a large bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps. The batter should be thick enough to coat the back of a spoon.

  3. 3

    Heat the Oil

In a large, deep pot or a deep-fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the correct temperature.

  4. 4

    Coat the Cod

Dip each cod fillet into the batter, allowing excess batter to drip off.

  5. 5

    Fry the Cod

Carefully place the battered cod fillets into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the cod and place it on a plate lined with paper towels to drain excess oil.

  6. 6

    Serve

Serve the beer battered cod hot with lemon wedges for squeezing over the top.
