Method
Make Simple Citrus Syrup
- 1
Combine sugar and water
In a small saucepan, combine 1 cup granulated sugar and 1 cup cold water.
- 2
Heat to dissolve
Place over medium heat and stir until the sugar fully dissolves and the mixture comes just to a simmer (do not boil aggressively). This should take about 3–5 minutes.
- 3
Add zests
Remove saucepan from heat and stir in 1 teaspoon lemon zest and 1 teaspoon lime zest. Let steep for 5–10 minutes to extract oils and aroma.
- 4
Strain and cool
Strain the syrup through a fine mesh strainer into a heatproof container to remove zest solids. Allow the simple citrus syrup to cool to room temperature (about 15–20 minutes), or chill in the refrigerator for faster cooling.
Assemble Sprite-style Soda
- 5
Measure carbonated water
Pour 4 cups (about 950 ml) of well-chilled carbonated water (club soda or seltzer) into a large pitcher. Keep it cold so it retains carbonation.
- 6
Add citrus syrup
Add 2 to 3 tablespoons of the cooled simple citrus syrup to the carbonated water to start (this yields a lightly sweetened, bright soda). Taste and add up to 1/4 cup (4 tablespoons) if you prefer sweeter soda. Stir gently with a long spoon to combine without losing too much carbonation.
- 7
Add fresh juices
Stir in 2 tablespoons fresh lemon juice and 2 tablespoons fresh lime juice. Taste and adjust: add an extra teaspoon of lime or lemon juice if you want more tang.
- 8
Boost flavor (optional)
If using, add 1 teaspoon lemon-lime or clear citrus extract to amplify the familiar 'Sprite' flavor. Mix gently.
