Method
Protein Preparation

Prepare ground beef
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking up with a spatula, until browned and no pink remains, about 6–8 minutes. Drain excess fat if necessary. Stir in 1 tablespoon taco seasoning and 2 tablespoons water, reduce heat to medium-low and simmer 2–3 minutes until seasoning is well incorporated. Keep warm.

Prepare chicken
Cut chicken breasts into 1/2-inch strips. In a bowl toss chicken with 1 tablespoon olive oil and 1 tablespoon taco seasoning. Heat a separate skillet over medium-high heat and cook chicken, stirring occasionally, until cooked through and just browned, about 6–8 minutes (internal temp 165°F / 74°C). Remove from heat and squeeze 1 tablespoon lime juice over top. Keep warm.

Prepare black beans
In a small saucepan, combine drained/rinsed black beans with 1/4 teaspoon salt, 1/4 teaspoon cumin (optional), and 1 tablespoon lime juice. Warm over low heat for 3–5 minutes until heated through. Mash slightly with the back of a spoon if you prefer a refried texture.

Prepare tofu (vegetarian option)
Cut pressed tofu into 1/2-inch cubes. Toss with 1 tablespoon taco seasoning and 1 teaspoon olive oil. Pan-fry in a nonstick skillet over medium-high heat for 8–10 minutes, turning occasionally, until crisp and golden. Finish with a squeeze of lime and set aside.

Make lime crema: whisk together sour cream (or crema), 1 tablespoon lime juice, 1 teaspoon hot sauce, and salt to taste (about 1/4 tsp). Transfer to a squeeze bottle or small bowl for serving.

Arrange salsas: place pico de gallo and roasted salsa verde into serving bowls. Set pickled jalapeños and pickled red onion in small bowls as well.

Warm tortillas: stack corn tortillas and wrap them in a damp clean kitchen towel. Microwave for 45–60 seconds until warm and pliable, or heat individually on a dry skillet over medium heat 20–30 seconds per side. Keep wrapped to stay warm. Warm flour tortillas the same way if using.

Build-your-own setup: On a large board or counter, arrange warmed tortillas, each prepared protein in its own bowl, beans, shredded lettuce, diced tomatoes, chopped red onion, cilantro, avocado/guacamole, shredded cheese, cotija, crushed tortilla chips, lime wedges, salsas, pickled items, and the lime crema. Provide small spoons/tongs for each topping so guests can serve themselves.

Suggested assembly guide: For each taco, place 1–2 tablespoons of protein in the center of a warm tortilla, add 1–2 tablespoons black beans if desired, top with shredded lettuce (about 1/4 cup), diced tomatoes (1–2 tablespoons), a sprinkle of shredded cheese (1–2 tablespoons) and a few cilantro leaves. Finish with a drizzle of lime crema, a squeeze of lime, and pickled jalapeño or pico to taste.

Serve immediately while proteins and tortillas are warm. Provide extra lime wedges and hot sauce at the table.

Storage: Refrigerate leftover cooked proteins, toppings, and sauces in airtight containers for up to 3–4 days. Reheat proteins gently in a skillet over medium heat with a splash of water. Store tortillas in a resealable bag at room temperature for 1–2 days or refrigerate for longer storage; reheat wrapped in a damp towel.
