Prepare the Tomato Sauce
In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add tomato sauce, dried oregano, salt, and black pepper. Simmer for 10-15 minutes, stirring occasionally.

Assemble the Po-Boy
Preheat your oven to 200°C (400°F). Slice the hoagie rolls in half lengthwise. Spread a generous amount of the homemade tomato sauce on each half of the roll.

Add Pepperoni and Cheese
Layer the pepperoni slices evenly over the tomato sauce. Top with shredded mozzarella cheese.

Bake the Po-Boy
Place the assembled po-boys on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven, garnish with fresh basil, slice in half if desired, and serve hot.
