    Infuse the Cream

    In a saucepan, combine heavy cream and dark roast coffee beans. Heat over medium heat until just simmering. Remove from heat and let steep for 30 minutes.

    Prepare the Egg Mixture

    In a mixing bowl, whisk together egg yolks, granulated sugar, vanilla extract, and a pinch of salt until well combined.

    Combine and Strain

    After the cream has steeped, strain it through a fine-mesh sieve to remove the coffee beans. Gradually whisk the infused cream into the egg mixture until fully combined.

    Bake the Crème Brûlée

    Preheat the oven to 325°F (163°C). Pour the mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes until set.

    Chill and Caramelize

    Remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours. Before serving, sprinkle a thin layer of brown sugar on top and use a kitchen torch to caramelize the sugar until golden and bubbly.
