    Preparing the Brussels Sprouts

    Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

    Seasoning

    In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until well coated.

    Roasting

    Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy, stirring halfway through.

    Finishing Touches

    Once roasted, remove the Brussels sprouts from the oven. Drizzle with fish sauce and toss in the sliced chilis and chopped cashews. Return to the oven for an additional 5 minutes.

    Serving

    Remove from the oven, sprinkle with sliced scallions, and serve warm as a crunchy side dish.
