Preparation of Streusel Topping

Make the Streusel

In a mixing bowl, combine duck fat, flour, brown sugar, oats, cinnamon, and salt. Mix until crumbly and set aside.

Prepare the Apples

In another bowl, toss the sliced apples with granulated sugar, lemon juice, nutmeg, and vanilla extract until evenly coated.

Make the Thyme Caramel

In a saucepan over medium heat, melt granulated sugar until it turns amber in color. Remove from heat and slowly stir in heavy cream, thyme leaves, butter, and salt until smooth.

Baking the Dish

Assemble and Bake

Preheat the oven to 350°F (175°C). In a baking dish, layer the apple filling and top with the streusel. Bake for 30-35 minutes or until the apples are tender and the top is golden brown.

Allow to cool slightly, then serve warm with scoops of vanilla ice cream and drizzle with thyme caramel.
