Base Ingredients

Method

Preparation

  1. 1

    Combine Cream and Milk

In a large mixing bowl, combine the heavy cream and whole milk. Whisk together until well combined.

  2. 2

    Mix Sugar and Egg Yolks

In a separate bowl, whisk the egg yolks and granulated sugar together until the mixture is smooth and pale in color.

  3. 3

    Heat the Mixture

In a saucepan, heat the cream and milk mixture over medium heat until it is hot but not boiling. Stir occasionally.

  4. 4

    Temper the Egg Yolks

Slowly pour a small amount of the hot cream mixture into the egg yolk mixture while whisking constantly to temper the yolks. This prevents them from scrambling.

  5. 5

    Combine All Ingredients

Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Stir in the vanilla extract and a pinch of salt.

  6. 6

    Cook the Mixture

Continue to cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).

  7. 7

    Cool and Chill

Remove the saucepan from heat and allow the mixture to cool to room temperature. Once cool, cover and refrigerate for at least 4 hours or overnight.

Churning and Serving

  1. 8

    Churn the Ice Cream

Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

  2. 9

    Add Optional Mix-ins

If desired, fold in chocolate chips or crushed nuts during the last few minutes of churning.

  3. 10

    Freeze the Ice Cream

Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.

  4. 11

    Serve

Scoop the ice cream into bowls or cones and enjoy your homemade vanilla ice cream!
