Prepare Chicken

    Marinate and Cook Chicken

    In a bowl, mix the olive oil, salt, and black pepper. Coat the chicken breasts with the mixture and let it marinate for at least 15 minutes. Preheat a grill or skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side or until fully cooked and juices run clear.

Sauté Vegetables

    Sauté Onions and Mushrooms

    In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté for 3-4 minutes until they begin to soften. Add the sliced mushrooms and continue to sauté for another 5 minutes. Pour in the teriyaki sauce and cook for an additional 2 minutes until everything is well coated and heated through.

Assemble Sandwich

    Toast Buns and Assemble

    Toast the brioche buns on the grill or in a toaster until golden brown. Place a piece of cooked chicken on each bun, top with sautéed teriyaki mushrooms and onions, and a slice of Swiss cheese. Close the sandwich with the top half of the bun.
