Preparation

    Prepare the Chicken

    Start by seasoning the chicken breasts with salt and black pepper on both sides. Set aside.

    Slice the Vegetables

    Clean the mushrooms and slice them. Peel and thinly slice the onion. Mince the garlic cloves.

Cooking

    Cook the Chicken

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F/74°C). Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and cook for about 2 minutes until they become translucent. Add the sliced mushrooms and minced garlic, and sauté for another 4-5 minutes until the mushrooms are tender.

    Add Teriyaki Sauce

    Pour the teriyaki sauce over the sautéed vegetables. Stir to combine and let it cook for an additional 2 minutes.

    Melt the Cheese

    Return the cooked chicken to the skillet, placing it on top of the mushroom and onion mixture. Lay the Swiss cheese slices over the chicken. Cover the skillet and cook for 2-3 minutes or until the cheese is melted.

Serving

    Plate the Dish

    Serve the chicken topped with the sautéed teriyaki mushrooms and onions. Enjoy your Uptown Chicken!
