This Ain't Your Grandma's Meatloaf Recipe
A generous portion of our own recipe served with mashed potatoes and brown gravy. Rev it up with jalapeno ketchup glaze and melted Pepper Jack. Served with choice of green beans or corn, and a dinner roll.

Meatloaf Directions

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Meatloaf Mixture
In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, and black pepper. Mix until all ingredients are well incorporated.

Shape the Meatloaf
Transfer the meat mixture into a loaf pan or shape it into a loaf on a baking sheet.

Add the Glaze
Spread jalapeno ketchup on top of the meatloaf.

Bake the Meatloaf
Bake in the preheated oven for 1 hour. In the last 10 minutes of baking, sprinkle shredded Pepper Jack cheese on top and allow it to melt.

Add Beef Broth
Slowly whisk in beef broth, stirring constantly to avoid lumps. Cook until the gravy thickens, about 5-7 minutes.

Season the Gravy
Add salt and black pepper to taste, and stir well.

Prepare the Vegetables
If using frozen green beans or corn, cook according to package directions. If using canned, simply heat until warm.

Serve the Rolls
Warm the dinner rolls in the oven for a few minutes and serve alongside the meatloaf.
