Cool and Slice the Potatoes
Once baked, remove the potatoes from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a little around the edges to maintain the structure.

Choose Your Stuffing
Choose any two of the following options to stuff your potatoes: Alouette cheese, Cheddar cheese, crumbled bacon, sour cream, chopped chives, steamed broccoli, cheddar cheese sauce, or chili.

Stuffing the Potatoes

Fill the Potatoes
Spoon the stuffing mixture back into the potato halves. Press down gently to ensure the filling is packed in.
Baking the Stuffed Potatoes

Bake Again
Place the stuffed potatoes back on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until the tops are golden and the filling is heated through.
Serving

Serve Warm
Remove the stuffed spuds from the oven and let them cool for a couple of minutes. Serve warm, garnished with additional chives or sour cream if desired.
