Santa Fe Chicken Recipe
Flame broiled chicken breast topped with sautéed onions, bell peppers, jalapenos, diced tomatoes, and Pepper Jack. Served with choice of green beans or corn, and a dinner roll.

Preparation of Chicken

Marinate Chicken
In a bowl, mix olive oil, salt, black pepper, cumin, and paprika. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.

Grill Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side until cooked through and juices run clear. Remove from grill and set aside.

Sauté Vegetables
In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add sliced onions and sauté until translucent, about 4-5 minutes. Then add the sliced bell peppers and jalapenos, and continue to sauté for another 3-4 minutes until the vegetables are tender.

Assemble Chicken
Place grilled chicken breasts on a serving plate. Top each breast with a generous portion of sautéed vegetables, diced tomatoes, and shredded Pepper Jack cheese. Allow cheese to melt slightly.

Cook Green Beans/Corn
In a pot of boiling water, add the trimmed green beans and cook for about 4-5 minutes until bright green and tender-crisp. For corn, if using frozen, cook according to package instructions. Drain and season with salt and pepper to taste.

Warm Dinner Rolls
Warm the dinner rolls in the oven at 350°F (175°C) for about 5-7 minutes until soft.
