Roast Beef

    Prepare the Beef

    Preheat your oven to 275°F (135°C). Rub the beef roast with olive oil, then season it generously with kosher salt, black pepper, garlic powder, and onion powder.

    Roast the Beef

    Place the seasoned beef roast on a rack in a roasting pan. Pour 2 cups of beef broth into the bottom of the pan. Roast in the preheated oven for about 3-4 hours, or until the internal temperature reaches 135°F (57°C) for medium rare.

    Rest the Beef

    Remove the roast from the oven, cover it loosely with aluminum foil, and let it rest for at least 20 minutes before slicing.

Mashed Potatoes

    Boil the Potatoes

    While the beef is roasting, peel and chop the potatoes into equal-sized chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.

    Make the Gravy

    After removing the roast, pour the drippings from the roasting pan into a saucepan. Whisk in flour over medium heat, cooking for 1-2 minutes until lightly browned. Gradually whisk in 1 cup of beef broth, stirring constantly until thickened.

    Prepare the Vegetables

    Steam or boil the green beans or corn until tender, about 5-7 minutes. Season with salt and pepper to taste.

    Serve the Rolls

    Warm the dinner rolls in the oven for about 5 minutes before serving alongside the meal.
