Prepare Jalapeno Ketchup Glaze

Make the Jalapeno Ketchup
In a medium saucepan, combine ketchup, finely chopped jalapeno peppers, honey, apple cider vinegar, garlic powder, onion powder, and smoked paprika. Stir well to combine.

Simmer the Glaze
Bring the mixture to a simmer over medium heat. Reduce heat and let it simmer for about 10 minutes, stirring occasionally until it thickens slightly. Remove from heat and set aside.
Prepare the Burgers

Season the Ground Beef
In a large bowl, combine ground beef, salt, black pepper, and garlic powder. Mix gently until just combined. Do not overwork the meat.

Form Burger Patties
Divide the mixture into four equal portions and shape them into burger patties, making a slight indentation in the center of each patty.

Add Cheese
After flipping, add a slice of pepper jack cheese on top of each burger. Cook for an additional 3-4 minutes, or until the cheese is melted and the burgers are cooked to your desired doneness.
Assemble the Burgers

Toast the Buns
While the burgers are cooking, cut the burger buns in half and toast them lightly on the grill or in a toaster.

Spread a generous amount of jalapeno ketchup glaze on the bottom half of each toasted bun. Place the cooked burger patty with melted cheese on top, then add the top half of the bun.
