Cook the Steak
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shaved ribeye steak, season with salt and black pepper, and cook for approximately 5-7 minutes or until browned and cooked through. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper and onion. Sauté over medium heat for about 5 minutes, or until the vegetables are softened and slightly caramelized.

Build the Sandwich
Once the cheese is melted, spoon the steak and vegetable mixture onto the bottom half of each toasted brioche bun. Place the top half of the bun on and serve with a side of potato chips.
