    Prepare the Vegetables

    Slice the green and red bell peppers into thin strips. Slice the onion into thin rings.

    Season the Steak

    Season the shaved ribeye steak with salt and black pepper.

Cooking

    Cook the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sliced bell peppers and onion. Sauté until they are tender and slightly caramelized, about 5-7 minutes. Remove the vegetables from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the seasoned ribeye steak. Cook for about 3-5 minutes, stirring occasionally, until the steak is cooked through.

    Return the sautéed vegetables to the skillet with the steak. Stir to combine and cook for an additional 1-2 minutes.

    Top the steak and vegetable mixture with slices of pepper jack cheese. Cover the skillet with a lid and let it sit for about 2-3 minutes, or until the cheese is melted.
