In a large bowl, combine the buttermilk, hot sauce, garlic powder, salt, and black pepper. Whisk together until well mixed.

Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover the bowl and refrigerate for at least 2 hours, or ideally overnight.

In a shallow dish, combine the all-purpose flour, paprika, cayenne pepper, onion powder, salt, and black pepper. Mix well to combine.

Remove the marinated chicken from the refrigerator. One piece at a time, take the chicken out of the marinade, allowing excess to drip off, and dredge in the flour mixture until fully coated. Place the breaded chicken on a wire rack or plate.
