Method
Chips
- 1
Prepare the Tortillas
Cut the corn tortillas into triangles to create chip shapes. You can cut each tortilla into 6-8 wedges depending on your preferred chip size.
- 2
Heat the Oil
In a deep skillet or frying pan, pour the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of tortilla; if it sizzles, it's ready.
- 3
Fry the Chips
Carefully place a handful of tortilla wedges into the hot oil. Fry them for about 2-3 minutes or until they are golden brown and crispy. Be sure not to overcrowd the pan.
- 4
Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.
White Queso
- 5
Melt the Cheeses
In a medium saucepan over low heat, combine the white American cheese and cream cheese. Stir frequently to prevent sticking and ensure even melting.
- 6
Add Milk
Once the cheeses are melted and combined, gradually add in the milk while stirring continuously. This will help achieve a smooth and creamy texture.
- 7
Season the Queso
Stir in the jalapeños, garlic powder, onion powder, cumin, and salt. Adjust the seasoning to your taste. Continue to cook on low heat for another 5 minutes, stirring occasionally.
- 8
Add Fresh Cilantro
If using, add the fresh cilantro just before serving to enhance the flavor. Mix well.
