    Wash and peel the potatoes. Using a sharp knife or a mandoline slicer, slice the potatoes into thin, even rounds.

    Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

    In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
