Prepare the Chicken Wings
Rinse the chicken wings under cold water and pat them dry with paper towels. This helps to ensure they get crispy when cooked.

Season the Wings
In a large bowl, combine the chicken wings with baking powder, salt, and ground black pepper. Toss well to ensure the wings are evenly coated.

Heat the Oil
In a large pot or deep fryer, heat the oil to 375°F (190°C). Use enough oil to fully submerge the wings.

Fry the Wings
Carefully add the seasoned chicken wings to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 8-10 minutes or until golden brown and crispy.

Remove and Drain
Once cooked, use a slotted spoon to remove the wings from the oil and drain them on a paper towel-lined plate.

Toss in Sauce
In a large bowl, add the hot fried wings and your choice of sauce (Buffalo, Barbecue, or Garlic Parmesan). Toss the wings until they are evenly coated with the sauce.
