Prepare the Chicken
Cut the chicken breast into small, bite-sized pieces. In a bowl, combine the chicken with Cajun seasoning and mix well to coat evenly.

Cook the Chicken
In a skillet over medium heat, add a tablespoon of oil. Once hot, add the seasoned chicken pieces and cook for about 5-7 minutes, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and set aside.

Prepare Jalapenos
If using fresh jalapenos, slice them thinly. If using pickled jalapenos, drain and set aside.

Fold and Cook
Fold the tortilla in half to cover the filling. Cook for about 2-3 minutes on one side, or until the cheese begins to melt and the tortilla is golden brown. Flip and cook for an additional 2-3 minutes on the other side.

Repeat the process with the remaining tortillas and filling ingredients.
Serving

Slice and Serve
Once all quesadillas are cooked, remove them from the skillet and let them cool for a minute. Cut into wedges and serve warm with salsa and sour cream on the side.
