Method

Chicken Fried Steak

    Prepare the Steak

    Tenderize the beef round steak using a meat mallet until about 1/2 inch thick. Season both sides with salt, black pepper, and cayenne pepper.

    Dredging Station

    Set up a dredging station with three bowls: one with buttermilk, the second with a mixture of flour, salt, black pepper, and cayenne pepper, and the third with beaten eggs.

    Coat the Steak

    Dip each steak first into the buttermilk, then into the flour mixture, and back into the buttermilk, finishing with another coating of the flour mixture. Ensure an even coating.

    Fry the Steak

    In a large skillet, heat vegetable oil over medium heat until hot. Fry the coated steaks for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Mashed Potatoes

    Cook the Potatoes

    Peel and chop the potatoes into even pieces. Place them in a pot of salted water and boil until tender, around 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Chicken Gravy

    Make the Roux

    In the same skillet used for frying the steak, drain excess oil, leaving about 1 tablespoon. Add flour and whisk over medium heat for about 2 minutes until golden.

    Add Broth

    Slowly add chicken broth to the roux while whisking continuously to avoid lumps. Cook until thickened, about 5-7 minutes. Season with salt and black pepper.

Vegetable Side

    Prepare the Vegetables

    Open and heat the can of green beans or corn in a small pot over medium heat until warmed through. Season with salt and pepper to taste.

Dinner Roll

    Serve the Rolls

    Warm the dinner rolls in the oven or microwave according to package instructions, then serve alongside the chicken fried steak.
